Domaine Billaud-Simon is one of the most important wine producers in Chablis. 17 hectares of vines, including plots in four Grand Crus (Les Preuses, les Clos, Vaudesir and les Blanchots) and four Premier Crus (Fourchaumes, les Vaillons, Mont de Milieu and Montée de Tonnerre) are cultivated, the style is very classic, with the emphasis on minerality and clarity. The winery's great capital are the vines, which are 50 years old on average, and give the wines an extraordinary depth and a lot of complexity. In addition, one tries to read here as late as possible in order to give the wines a full body. The grapes are also sorted by hand before processing in order to obtain the best possible quality.
