The Chablis AOP is the pillar of Billaud-Simon's range. It is prepared with effort and care, of course the harvest is done by hand, then the harvest is selected again at the sorting table so that only healthy and ripe berries become this delicious Chablis. With this wine, Billaud-Simon shows what high quality is possible in village locations. This Chablis is very mineral and clear in style, the influence of wooden barrels is dispensed with here, the pure cool fruit should be the focus here.

2022 was a warm vintage in Chablis, as was the case from 2018 to 2020. This time, however, also with a satisfactory quantity. Despite the high temperatures in summer, the wines are very clear and precise, which can already be noticed in the scent of this Chablis from Billaud-Simon. The aromas are reminiscent of white fruits such as apples and pears, with some citrus fruits and a fine minerality. On the palate, the 2022 Chablis AOP is precise, has a good pressure on the palate, and in the long-lasting finish it is taut and fresh like a mountain stream. If you want to introduce someone to the typical Chablis, this would be an excellent choice.

Montee de la Tonnere is considered one of the best 1er Cru sites in Chablis. It is located opposite the Grand Crus, and is, so to speak, the eastern extension of the Grand Cru slope in Chablis. The wines there have an unusual depth and a sharp and salty minerality, their complexity is reminiscent of a Grand Cru. The wines from this site have an aging potential like a Grand Cru.

Billaud-Simon has old vines in this top location, their Chardonnay vines are on average 45 years old here. With just over two hectares of property, around 12,000 bottles are produced per year in normal years, so a lot of excellent wine. 2022 produced a crystal-clear and aromatically cool Montée de la Tonnerre, which shows its typical minerality with good extract. It is grippy and still leaves a full impression on the palate. You can enjoy it young, even if it will probably only fully blossom 4-5 years after the harvest.
