For DECANTER magazine, Master og Wine Andy Howard rates the Chablis Vaillons 2021 by Billaud-Simon 92/100 and is impressed by the floral tones reminiscent of jasmine and the delicate note of peach. He also notices a lot of bite in the finale and good potential.

The 1er Cru Vaillons by Billaud-Simon is obtained from six plots. These are on the left bank of the Seirein, which produces the fresher and more snappy Chablis wines. The Vaillons is said to be an exciting wine with a lot of minerality, but also body. Here you can leave the grapes on the vine for a long time, which is beneficial for the formation of aromas.

Of course, the harvest is carried out by hand here and then manually checked again on the selection table to ensure the best possible quality of the individual berries. The Vaillons is spent fourteen months partly in used barriques.

2021 was the vintage of classic finesse. This relatively cool year resulted in very typical Chablis, whose bite and mineral clarity inspire. There are floral notes and citrus fruits in the scent, supported by a barely noticeable note of wood. It's all very well balanced. On the palate it confirms the taut coolness of the nose, has a good grip, is rich in extracts and is very long. It will delight Chablis fans!
