The magnum bottle from the very good and cool 2021 vintage. The Chablis Tete d'Or was aged 20% in wooden barrels because the extract and the juicy fullness were able to pack the relatively high proportion of wood well. Relatively so, because Chablis is traditionally used sparingly with the proportion of newer barrels. This Billaud-Simon cuvée comes from the estate's best Village plots. For the Domaine Billaud-Simon, this wine is a kind of qualitative ambassador. It shows the heights that normal Chablis plots can reach if they are given the best possible care. Of course, in combination with the best conditions such as old, healthy vines and the know-how of a top company like Billaud-Simon.

Decanter magazine awards 91/100 for the 2021 Tete d'Or and writes: "Olivier Bailly used some barrel fermentation (and malolactic) for 20% of this alternative blend. From parcels in Chapelot, Morein and Pied d'Aloup . Just the right amount of oak, not overpowering. Clean, bright, touch of zest to finish. Long flavour, powerful acidity."
