A great Premier Cru from very old vines, averaging about 60 years. It grows south of the Grand Cru hill in Chablis on the left bank of the Serein river. Here, too, the Domaine Billaud-Simon can draw on the full, 2.55 hectares are owned in this excellent 1er Cru location, which is one of the best in Chablis.

This wine spends fourteen months at Billaud-Simon, partly in barriques, which gives it the finishing touch, but here too the wood tone always remains in the background. The brilliant and minerally cool 2021 vintage was even treated to a few half casks as it has so much substance to integrate the wood. For all its clarity and elegance, the Chablis Mont de Milieu also has a creamy, soft touch, due to its high extract and the perfect ripeness of the grapes. A wine that tastes young, but can also be stored for several years.

Master of Wine Andy Howard writes about the 2021 Mont de Milieu by Billaud Simon in Decanter magazine: "A very youthful Mont de Milieu. Winemaker Olivier Bailly noted that if you want to drink this young , make sure it is decanted for at least an hour. Greenish tint in the glass, aromas of white peach and pear. A premier cru cut with vibrant acidity, finishing with some mineral and saline notes. They own 3ha here, ranging from the bottom to the top of the Mont de Milieu slope. Has a very bright future. 94/100." This wine is rated even one point higher than its predecessor from the much-vaunted 2020.
