Only 2% of the total area in Chablis is classified as Grand Cru. That's just 106 hectares, which are divided into seven climates, i.e. individual locations. The les Preuses is around 11 hectares in size and lies above the Bougros in the north of the Grand Cru hill. The name is derived from "rocky path" because there was an old Roman road here. The les Preuses wines are characterized by intensity and power, but without any heaviness. Mineral, expressive and gripping. In addition, the wines can be stored for a very long time.

The 0.41 hectare plot of the Domaine Billaud-Simon was planted in 1949. These very old vines are the guarantee of complexity and depth in the later wine. The expansion takes place with only a moderate influence of wood; used barriques and large barrels are used. You can usually find aromas such as citrus fruits, flowers and a slight hint of honey in this wine.

The wine magazine DECANTER rates the 2021 Les Preuses with a whopping 94/100 points and writes: "Always a favorite in the Billaud-Simon line up."
