The Domaine Billaud-Simon owns almost 3 hectares in the Chablis 1er Cru les Vaillons. Here too, of course, the grapes are picked by hand and then selected again by hand for the quality of the individual berries. The wine ageing takes 14 months and is partially made in used barriques.
The fragrance is very typical for Chablis in its clarity and coolness, here with a very subtle wood note. Floral notes and citrus fruits characterize the Vaillons, of course in a very clear and aromatic "cool" way. On the palate it has a good extract, is precise and long in the final. A storable white man with great class.
