Les Clos Perdus - translated the lost vineyards, is the project of Hugo Stewart and Paul Old, who began in 2003 to revive forgotten vineyards in Languedoc and Rousillon. Today it has become a biodynamic winery with 20 hectares of mostly very old vines that deliver mini-yields of highly concentrated wines that are among the most ambitious in the whole south of France. A conscious decision was made in favor of difficult-to-work plots in the heights of the Corbières mountains and in the Agly valley in order to give the grapes a certain coolness in this warm region. All wines are produced with great manual effort, there is even no temperature-controlled fermentation, as the winery has very cool cellars. In this way, very individual wines are produced every year, which, in addition to the terroir, grape variety and maturation character, also have a distinctive vintage style, as there is little intervention in the fermentation.
