The Chablis la Boissoneuse by Julien Brocard is a very high-quality Chablis AOP that comes from a single plot in the village of Préhy. The local clay-limestone soils are ideal for Chardonnay, rich in finesse, for which the Chablis origin is famous. As is standard at Julien Brocard, the Boissonneuse is stored 100% in wood, specifically in Fudern, the whole thing lasts 10-12 months, depending on the vintage, and the wine is on the fine lees.

The result is a very elegant, but also profound "cool climate Chardonnay". It is already a pleasure when young due to its harmonious nature and the balancing extract, but it can also mature in the bottle for a longer period of time. Mineral flint notes and an animating saltiness can be found in the long finale. Aromatically it is reminiscent of citrus notes, spices, acacia flowers and grapefruit.

2019 was a very powerful and extract-rich vintage, in which the Chablis wines tend towards the Côte d'Or in terms of abundance. Nevertheless, they are consistent in every phase and have a long life expectancy.

Decanter magazine awards 93/100 for the 2019 Boissonneuse and writes in October 2020: "A highly intriguing and high-quality Chablis from Julien Brocard in Prehy. Certified biodynamic since 2002, this has a fine balance between the classic notes of minerality, shellfish and crisp acidity, along with a creamy, indulgent character that has lovely purity and length. Already very appealing, this has all the components to develop into a fine Chablis in the next 12-18 months."
