Still wines are very rarely produced in the Champagne. They are labeld with the name Côteaux Champenoise. Even more rare are red still wines. Bollinger produces the La Côte aux Enfants from 100% Pinot Noir in a Grand Cru vineyard in Ay. It reminds of red burgundy and is one of the rare specialties of the wine world.
