The Pinot Noir by Sophie Schaal is a cuvée from two spectacular vineyards with old vines, which provide the depth for this wine. The harvest is of course laborious by hand, then the harvest is selected again to use only the best berries for this fine red wine. The fermentation is carried out by the naturally present yeast, after which this Pinot Noir matures for ten months in French wooden barrels.
For a Pinot Noir, the color is rather dark, the scent is more reminiscent of black than red berries, also of cherries, and the wood adds a delicate hint of vanilla. It is soft and very charming on the palate, the fruitiness of the fragrance is also reflected in the balanced finale. An extremely friendly Pinot Noir that hardly has anything of the rigor and tannin structure of a Burgundy.
