The Hautes-Côtes-de-Nuits blanc from Hoffmann-Jayer (formerly Jayer-Gilles) comes from the municipalities of Magny-lès-Villers and its neighbor Villers-la-Faye, between Nuits- Saint-Georges and Beaune. Here too there is a significant proportion of 29% Pinot Blanc in play, the vines of which are around 65 years old. The 71% Chardonnay comes from vineyards with vines that are around 45 years old. The clay soils have a high limestone content.
The white Hautes-Côtes-de-Nuits is aged in the same way as its brother from the Côte de Beaune, i.e. between 50 and 70% in 100% new 350 liter barrels, the rest in concrete tanks. It takes a full 21 months before the wine is bottled and sold.
The scent of this white Burgundy is reminiscent of white fruits and lychees, plus a hint of flowers and the noble woody tone. On the palate it is voluminous and intense, but without neglecting the freshness. A life expectancy of at least 10 years should not be an issue.
We particularly recommend this Hoffmann-Jayer Burgundy with meat or fish terrines, seafood and cheese.
