The Gewurztramer by Sophie Schaal grows on limestone soils that have good drainage. These layers make it easier for the roots to penetrate deeply into the soil, which contributes to the complexity of the wines. The grapes are harvested exclusively by hand, the grapes are then pressed completely without first separating them from the stems in order to give the Gewürztraminer, which tends to be opulent, some structure through the tannins from the stems.
