The Tossals Seleccio is one of the mountain wines from Cellers Grifoll Declara. It consists of half Garnacha and half Cariñena (= Carignan), which grew around the Catalan village of El Molar in terraced locations with sandy clay soil at an altitude of around 300 meters. The fermentation takes place without the addition of cultured yeasts. The wine is then allowed to rest in French barriques for nine months, where it receives its finishing touches.
The scent of the Tossal Seleccio is reminiscent of plums and dark berries, with a delicate note of leather and the typical Mediterranean herbal spice. It starts powerfully on the palate, is surprisingly lively, the Grenache pleasantly rounds off the long finale. Tossals Seleccio is ready to drink when it is released, but can also be aged in the bottle for a few years.
Serve it with tapas, at a barbecue party, with game and dark meat, but this delicious Spaniard goes also well with pizza and pasta.
