An almost forgotten wine region north of Sevilla is benefiting from climate change. At an altitude of around 550m, excellent Merlot thrives on clay soil, which is ideal for this variety. The fermentation takes place without the addition of cultured yeasts, after 14 months in wooden barrels it is bottled. An opulent and soft wine that is never broad. A discovery!
