The Noe Pedro Ximenez Sherry from Gonzalez Byass is a very special wine. His grapes only grow in vineyards belonging to the winery in Jerez Superior, which, with its very calcareous soils, is considered the best subzone in the sherry region.

For this extremely concentrated and sweet sherry, the late-harvested grapes are dried on the vine in the sun and then further dried on mats for two weeks, resulting in an incredibly concentrated wine that is at least 30 years of aging in solera barrel systems and the associated evaporation gains further concentration.

The result is more than impressive. The color is dark brown, reminiscent of used oil, as the oiliness on the edge of the glass supports this purely visual comparison. The scent fills the room and is reminiscent of raisins, dried figs, coffee beans and spices. The incredible grape sweetness strikes on the palate. There are over 400 grams of residual sugar in one liter of Noe Pedro Ximenez. This makes it one of the sweetest wines ever. The finish is monumental and extremely long-lasting. This sherry leaves you gasping for air. An experience!
