The Ouvrage is the top vuvée from Champagne Lallier, a traditional house that was founded in 1906 by René Lallier.
Lallier's motto here is: "a great wine begins with the best grapes". For the Ouvrage Champagne these come from two Grand Cru single vineyards, the approx. 40% Chardonnay grows in Les Hureaux in Oger and the around 60% Pinot Noir in Le Meurtet in Aÿ . Only the best base wines are used here, which, due to their high density and complexity, require very little dosage. Therefore, this top cuvée is bottled as Extra Brut after it has matured on the lees for at least 6 years.
Due to the long storage time and the mature base wines, the Lallier Ouvrage has a slightly golden color. Its scent is playful and elegant at the same time, it has aromas that are slightly reminiscent of nuts, apricots, brioche and a fine minerality. On the palate it delights with its subtle and complex nature, it has a remarkable depth and a very long finish in the best harmony and with a lot of tension. A great champagne.
