The Domaine Hoffmann-Jayer Bourgogne Hautes-Côtes-de-Beaune Blanc comes from the Les Vallerots location in Magny-lès-Villers, north of Ladoix-Serrigny. The plot has a clay-limestone soil with a perfect southeast orientation.

The vines of the Hautes-Côtes-de-Beaune from Hoffmann-Jayer (formerly Jayer-Gilles) are an impressive 55 years old, which gives the wine a complex depth. What is unusual here is the high proportion of Pinot Blanc at 30%, which complements the Chardonnay (70%). Hoffmann-Jayer also follows its own path when it comes to expansion. Depending on the vintage, 50-70% of the wine matures in new 350 liter wooden barrels, the rest of the harvest is stored in sandstone tanks for 15 months. The final bland is then made, which matures in tanks for another six months before the wine is bottled unfined and only with a light filtration.

This results in a playful and complex white Burgundy with a noticeable oak influence, but which always remains fresh and subtle.
