The Hoffmann-Jayer Bourgogne Passetoutgrain comes, as is usual for this winery, from old vineyards, here around 50 years old. Passetoutgrain is always a cuvée of Pinot Noir and Gamay, which grow in the same plot. It has a fruity character and usually tastes best in the first 3-4 years.
High-quality specimens, like this one, also mature excellently for longer. This Passetoutgrain sits in tanks for a full 21 months before being bottled. Therefore, it only comes onto the market when many of its counterparts have already been drunk. The wine has charm, fruit and depth. A class Burgundy for every day.
