The Bourgogne Aligoté from the Domaine Hoffmann-Jayer (formerly Jayer-Gilles) comes from the Les Castaings plot at the domaine's headquarters, in Magny-lès-Villers.
The special thing about this wine is, on the one hand, the vines, which are around 70 years old, and the long aging of 18 months in the tank before the wine is bottled. This gives the wine a natural stability and filtration can practically be dispensed with because all the trub will have settled after such a long time. The vineyard area for this Aligoté is 1.11 hectares and has calcareous clay soil. The annual production volume is around 3000 bottles.
The Hoffmann-Jayer Bourgogne Aligoté has a light yellow color. Its scent is reminiscent of yellow fruits with a slightly nutty undertone. On the palate it is juicy for a wine from this grape variety, it has a nice depth and is always lively. An excellent Aligoté. According to the winery, it can be stored for up to eight years, depending on the vintage.
We particularly recommend it with antipasti, vegetable dishes, salad, fish or shellfish.
