This Gevrey-Chambertin comes from two different locations in this municipality, with plots planted with approximately 90-year-old vines. These only have a small yield, but produce wines with great viscosity and an impressive aromatic intensity. The Domaine Réné Bouvier therefore calls it Tres Vieilles Vignes, i.e. very old vines, because "only" old vines are the standard here anyway.
At Domaine Réné Bouvier, around 30% new wood is used for this very special Pinot Noir; the wine sits in barrels for 18 months before being bottled. To increase the structure and bite, around 50% is fermented as whole bunches, i.e. with the stems.
2021 was a classically structured vintage with freshness and elegance, first-class Burgundies that were initially completely underestimated. Very little of this Gevrey-Chambertin in high-yielding years, and even less in 2021. So you should hurry up to get some of it.
