Gavi has a very long wine-growing tradition, this wine was mentioned as early as 972. The Gavi grape variety is Cortese, which has its bastion in Piedmont but is also widespread in other parts of northern Italy.
If the Gavi comes from the municipality of Gavi, it may bear the designation Gavi di Gavi or, as here, Gavi del Comune di Gavi on the label. All Gavi wines have been classified in the highest Italian quality level DOCG since 1978.
The Sansilvestro Gavi del Commune di Gavi Fossili is an animating white wine whose aromas are reminiscent of limes with a floral undertone. It is fresh on the palate and of medium weight. In the final one has mineral sensations, with good structure and the best harmony. Serve it on its own or with seafood, vegetable dishes, white meat and pasta.
