Bibi Graetz's winery is already iconic despite its short existence. This lean style of Sangiovese with lots of bite and structure quickly found its fans. Bibi Graetz is originally from Norway and started making wine on his parents' farm in Tuscany in the 2000s.
The wine Testamatta, which means crazy head, is a single-variety Sangiovese that is designed for a long storage period. It bears an artist label designed by Bibi Graetz. From the very beginning, Bibi's goal was to make the Testamatta one of the best red wines in Tuscany.
What can you say after 20 years: goal achieved! The Tastamatta consists of 100% Sangiovese vines, which grow in five locations that are very different regionally and in terms of terroir. Two are in Chianti Classico, two near Florence and another plot near Siena.
The most meticulous selection in the vineyard is standard at Bibi Graetz; up to eight harvests are carried out in each of these locations in order to only harvest optimally ripened grapes. The grapes from the smaller plots are fermented in open barriques, the larger plots in 50hl barrels. The wines are then aged for 20 months in used barriques and large barrels. From these batches, Bibi Graetz composes his Testamatta ultra-premium wine, which enjoys cult status today.
Bibi Graetz about his 2021 Testamatta; "2021 it's a hit! The right word to describe Testamatta I think is "fleshy". I say "flesh-ness" because there is a combination of fatness, transparency and freshness. It's like when you take a steak of Kobe beef, you cut it and you put it on the ire...and it just melts. This beautiful fat, which is the most amazing thing in the world, combined with the transparency and the freshness of the red fruits. This combination in Testamatta is really magical .".
