The Passito or Appassimento wave has now also reached Piedmont. In this process, the grapes are dried after harvesting to concentrate the ingredients. For this method, the Piedmontese prefer the red grape variety Barbera, which thanks to its structure retains a pleasant freshness even when compacted.
The San Silvestro Appassimento Barbera Passito is an intense and powerful wine that offers aromas of cherries, dried fruits, herbs and cocoa. It is voluminous on the palate, the structure is reminiscent of a Ripasso from Valpolicella, in the juicy and long finish it has a trace of residual sweetness that makes it scratch the semi-dry area.
The Barbera Passito Sansilvestro is a Piedmontese that will appeal to lovers of intensely fruity wines who like to head towards Primitivo. It is ideal for aromatic dishes such as pizza, grilled food, burgers, lamb, hard cheese or stews.
Although this wine has not been around for long, it has already received many awards. Luca Maroni is usually between 93 and 94/100, there was a gold medal from the Sommelier Choice Awards, Mundus Vini and the International Wine Challenge each awarded silver (both vintage 2020 ).
