The Paul Mas Réserve wines are produced from the vineyards of Nicole near Pézenas and / or the Château Paul Mas in Conas. Michel Mas is responsible for the vinification and is supported by the Australian oenologist Richard Osborne, who mainly cares about the white wines.
The Viognier "Nicole Vineyard" from the single Vineyard Collection by Paul Mas is a textbook example for this grape variety. It possesses the flavours ot a whole flower market, chamomile and a juicy full body with a noticeable opulence in the long finale. Nevertheless, the wine is also easy to drink.
