The white Sancerre from the "Signature" series by Pascal Jolivet is a wine of radiant elegance and clarity. A wonderful expression of Sauvignon Blanc from a cool growing zone. This precision requires a very careful harvest and selection of the grape material, everything is also processed very carefully, the must is transported in the winery by a very well thought-out system using only gravity. The grapes from the different soils, 50% limestone, 30% limestone-clay and 20% flint, are vinified separately and only later put together to get the perfect balance. A top Sancerre, with everything that defines this origin.
