Saint-Aubin is the trendy origin for still reasonably inexpensive white Burgundy of great finesse. The wines are an insider tip, as they are not quite on the radar of Burgundy fans from all over the world. En l'Ebaupin is a 1er cru, which takes its name from the hawthorn bushes that used to grow here.
This enchanting wine from Parcellaires de Saulx shows a complex nose with fine toasted aromas, citrus notes, hazelnut and a little vanilla. On the palate it is powerful and balanced, has a nice structure and a good bite in the long and perfectly balanced finale. This can be enjoyed for many years to come if you resist the temptation to drink it young.
