The traditional Veneto grape varieties are soft-pressed for the Valpolicella Classico by Sartori and macerated for 8-10 days. Fermentation takes place at a controlled temperature. This is followed by a maturation of about 6-8 months in large oak barrels as well as in concrete and / or steel.
