The Savagnin Cuvée Romane by Eric Thill comes from the single vineyard Les Grandes Vignes. The yield is minimal at just 25 hl / ha, as is the sulfur content of the wine. The malolactic fermentation is stopped to give the wine its crisp freshness, then it was aged for nine months in wooden vats before it was bottled. The 2018 Savagnin is particularly full-bodied, subtle notes such as nuts, honey and citrus fruits characterize it, for all its fullness, it also has a wonderful acidity that gives the wine tension and race. Great!
