Thierry Mortet's Gevrey-Chambertin comes from a 3.1 hectare plot with vines aged between 15 and 60 years. Of course, everything is read by hand and macerated at 13 to 14 degrees for 5 days. After fermentation, the aging takes place in new barriques, before bottling the wine is lightly filtered.
