Merlot, Cabernet Franc, Cabernet Sauvignon and Lagrein are the grape varieties of this top South Tyrolean cuvee, named after Susanna Amistar, an ancestor of the Sölva family. Stephan Sölva adds a small portion of the dried berries to the must, and about 30% of the juice is removed before fermentation in order to maintain a more extreme ratio between must and skin and to increase the fullness of the wine. The proportions of the individual varieties vary from year to year, depending on the degree of ripeness, quantity and interaction of the grape varieties. Falstaff magazine always rates the Amistar rosso highly, the vintage 2015 got 93/100, the 2016er 92/100. 2017 91/100.
