A very special wine is the Fermentacion Lenta (= slow fermentation) from Ximénez-Spínola. A dry white wine made from Pedro Ximenez grapes, aged in French 300L barrels. Slow fermentation is a special process in which 30 liters of must are poured into the barrel every day, which then ferment. This creates a character wine with great aging potential, 15 years of bottle aging are no problem for this extraordinary plant. The nose is dominated by French oak, which is complemented by notes of raisins and dried plums. On the palate the wine is full, but not heavy, the balance is right, as everything is carried by a lively ripe acidity. That's really exciting.
