The Vin Santo is the dessert wine classic of Tuscany. It is made from dried white grapes, which significantly increases the sugar content of the berries and leaves a noticeable residual sugar in the wine.
The Castelgreve Vinsanto of Castelli di Grevepesa is made with the grape varieties Trebbiano Toscano and Malvasia del Chianti, which are fermented in small oak barrels called Caratelli and than aged for at least 36 months, after drying on reed mats. This Vinsanto is made only from perfectly matured grapes. It get the finesse from the combination of sweetness and the ageing flavors. In the long finale, it is juicy and soft. Try it with cantuccini, fruit cake or blue cheese.
