Our special favorite from the Werther Windisch winery is the dry Silvaner 8 degrees 14 minutes. It is the qualitative middle structure of the portfolio, comparable to local wines from other estates. It has significantly more extract and depth than the Silvaner Gutswein and is fresher and firmer than the single-vineyard Silvaner Lieth. This wine is matured in steel tanks and in 600 liter barrels, the so-called "half piece". It is on the lees for five months and is subjected to regular batonnage during this time, which means stirring the lees in the barrel, which makes the wine denser and creamier.
Silvaner specialist Jens Windisch always gives this wine time to harmonize and then come out on the market ready to drink. The 2020 8grad 14minuten has a fine spiciness, a delicate vegetable tone, as is typical for the Silvaner grape variety, and a hint of tobacco in the bouquet. On the palate it's slightly creamy, but just enough to give space to freshness. That's perfectly balanced. It is now in a perfect drinking phase and can be used in a variety of culinary ways. Try it with seasonal dishes such as asparagus or pumpkin dishes, white meat, chicken, fish or rustic dishes with sauerkraut. It almost always fits.
