Saint-Romain is a relatively unknown appellation in a side valley of the Côte de Beaune, behind Auxey-Duresses. Due to global warming, these rather cool climate at higher altitudes are becoming more and more attractive and many well-known wineries have now set up plots here. The calcareous soil and the cool altitude in Saint-Romain are a very good location for the Chardonnay grape, which produces mineral and fresh wines here. Due to the wind that is present here, there are also few problems with rot, as the grapes always dry quickly.
The rather cool 2021 vintage produced a small crop of classic structurd wines in Burgundy. The Perrieres from Les Parcellaires de Saulx has a very good density and is still fresh and vital. It has citrus fruits and apples, orange blossom and an attractive oak note from the oak barrel in the nose. On the palate it is rich and rich in extracts, yet very fresh and never tiring. A really good white Burgundy from a still insider tip AOP.
