The champagne is an icon of viticulture . Sparkling wine producers around the world are passionate about the champagne by cultivating the same vine varieties and copying the fermentation and cultivation methods to get as close as possible to their stylistic model. Champagne is mainly made from Pinot Noir , Pinot Meunier and Chardonnay . Some old varieties such as Arbane and Petit Meslier, and Pinot Blanc are also permitted.

The champagne wineries usually produce a standard cuvée, which accounts for the lion's share of the production. The aim of these cuvées is a champagne with the same taste for years and years. Special cuvées, either from certain vines (eg Blanc de Blancs) or with a modified dosage (eg brut zero or brut nature) are often used. In particularly good vintages, prestige blends are bottled with the vintage on the label, usually released after several years of storage on the yeasts.
