Since Gerhard's daughter Johanna Markowitsch actively joined the winery, a new area of winemaking has been added, the so-called natural wine. The focus here is on the complete avoidance of sulfur.
The wines have the term "JoMa" on the label to distinguish them. A very exciting variant of the natural wine is the PÉTILLANT NATUREL, called "Pet Nat" for short. For this purpose, fermenting must is filled into pressure bottles, which are known from the production of sparkling wine, and sealed with a crown cap. As a result, the carbon dioxide produced during fermentation is retained in the bottle and then in the wine. So the sparkling wine makes itself in the bottle.
For the Pet-Nat Blanc de Noir Rosé by Johanna Markowitsch, Pinot Noir and St. Laurent grapes were fermented spontaneously, i.e. without the addition of fermentation yeasts, and the must then "locked" in the bottle. As with champagne production, the bottles are then shaken by hand and finally disgorged, i.e. freed from their yeast residue. At no time during production is sulfur used.
The scent is reminiscent of strawberries and rhubarb. On the palate it is puristic to mercilessly dry, but has a slightly creamy mouthfeel thanks to its good extract. An exciting sparkling wine, off the mainstream.
