The Maury is a red liqueur wine from the southern Roussillon, north-east of the city of Perpignan. Similar to Port wine, the fermentation is stopped by the addition of alcohol, but the French "Vin doux naturel" is usually bottled with "only" 17 to 18% of alcohol, as opposed to the 20% of port wine.
The Maury by Paul Mas consists of high-quality Grenache grapes which have a potential natural alcohol content of 15%. Low yields and harvesting by hand are standard. After the must has been fermented for some time, the fermentation is stopped with Eau de Vie, which keeps a part of the natural glucose. After 14 months in traditional wooden barrels the wine is bottled. Maury fits perfectly with chocolate desserts and blue cheese.
