The Marsannay Le Finage by Bouvier is composed of several plots that have a clay-limestone soil. It a the soft and fruity Burgundy style, a Pinot Noir that is also a pleasure to drink young. It is made with great care, there is a "green harvest", i.e. a sorting out of unripe grapes before the actual harvest, in order to use only the best material for the wine. It is fermented only with natural yeasts, then the wine is aged in barrels for 12 months and in the bottle for another 6 months before it is released. Sulfur is used only minimally. The spicy raspberry note of the finage is enchanting, the tannins are ripe but give enough structure and freshness. A perfect representative of its origin.
