The Gavi di Gavi is only grown in the municipality with the same name. Roberto Sarotto produces it from vines that are up to 40 years old, which give the wine a nice depth and structure. It is also one of the few white wines in Italy that does not have to be drunk in the first year after the harvest, it develops very nicely on the bottle and shows a complex interplay of aromas with increasing age. It is one of the most important wines in the Sarotto house, a figurehead, so to speak, that has already won numerous awards.
