The Desir by Doyard-Mahé is bottled as an extra brut, so it only has a dosage of around 4 grams. It comes only from 1er Cru sites and 100% from the Chardonnay grape variety, which thrives so well on the Côte de Blancs. Due to the very well-ripened grape material, this cuvée is very harmonious despite the low sugar content, the style is a lively and appetizing champagne that can also be served with a whole menu.
Frank Rembold tasting March 2023: an amazingly full-bodied extra brut champagne, which shows through its balance how much extract is involved here. Long finale in best harmony. It certainly doesn't need a higher dosage. Wow!"
