Xavier Monnot owns 17 hectares of vines on the Côte de Beaune, the origins go back to the Domaine Rene Monnier, as his mother is a Monnier. In 1994 he began to take over the domaine with prime vineyards in Meursault, Puligny-Montrachet, Pommard and Volnay and introduced various changes. Since 2006, the wines have been marketed under his own name. We find the philosophy of combining young and old vines very interesting in order to get the intense fruit of the young vines and the depth and complexity of the old vines in the wine. A vineyard must be clean like a golf course, is his credo. Healthy and perfectly ripened grapes are the focus of all decisions. He is careful with new barriques, depending on the wine, 15-35% new oak is used. Today, Xavier Monnot is one of the most respected wineries in Burgundy and sells his iconic wines to selected merchants all over the world.
