The traditional winery Champagne Ayala was founded in 1860 by Edmond de Ayala. Already early Ayala was appreciated because of its high quality, so that in 1882 it belonged to the founding members of the association "Grandes Marques". Ayala was always a small champagne producer in the family possession. In 2005 it was purchased by the Bollinger family, which continues the brand and wine style in the same way.
Ayala has always been known for its rather crisp dry style. In addition to the Pinot Noir , which is famous for the area around Ay, Ayala also has a high Chardonnay share. The champagne from Ayala has always just as much dosage as necessary, in order to put the lively freshness into the focus.
