The Aligoté from Réné Bouvier has an average age of about 55 years. Therefore it bears the addition Vieilles Vignes (=old vines) on the label. It is matured half in 600L barrels that give off a delicate oak aroma and in tank to preserve the freshness of the wine. As usual here, you take your time. Only a few Aligoté are bottled after 12-18 months og ageing, depending on the vintage. That is why the Bouvier Aligoté only comes onto the market when comparable wines from other winegrowers have long been drunk. This wine is traditionally served as an aperitif, with fish dishes, tureens or jambon persillé. A very good Aligoté that can also age in the bottle.
