Saint-Aubin is considered the new hotspot for white burgundies. Located in a side valley behind Chassagne- and Puligny-Montrachet, climate changes are beneficial to this climatically rather cool origin. The 1er Cru "sur Gamay" is located near the hamlet of Gamay, which has nothing to do with the Beaujolais grape variety of the same name. This location is relatively close to Puligny-Montrachet and bears some resemblance to its famous neighbor. There's a lot of finesse here, and a light-footed and dashing elegance, as exemplified by this fine example of Les Parcellaires de Saulx. The wine has this characteristic from its calcareous clay soil and from the relatively high, south-facing location.
2020 is another excellent vintage for white Burgundy, which brings remarkable delicacy and freshness despite the warm weather. This is amplified in sur Gamay, as this cool location naturally yields wines with great finesse. The Saint-Aubin Premier Cru sur Gamay is stored at Les Parcellaires de Saulx for 12-15 months in small wooden barrels that were used once before. This is how this wine gets its perfectly balanced oak note, which perfectly complements the aromas of yellow fruits, citrus fruits and flowers. On the palate it is clear and harmonious, straightforward and equipped with an impressive tension until the long finale. A great Saint-Aubin! Can be stored.
