A specialty of the Bergerac are the sweet white wines called "moelleux". The grapes for the Côtes de Bergerac moelleux by Château les Fontenelles are harvested with maximum ripeness, but before they are attained by the noble rot Botrytis.
As soon as a balanced relationship between sweetness and alcohol is reached, the fermentation is stopped. The result is a fruity, soft and sweet white wine, which can be used as an aperitif or for semi-sweet desserts like fruitcakes.
