The 2020 Chablis AOC by Billaud-Simon is also available in a practical "half bottle". It is laboriously read by hand and then selected again on the sorting table so that only the best berries are used for the final wine. After fermentation and the subsequent 9-month yeast storage in steeltanks, it is bottled. The result is a classic Chablis that can be stored for a number of years and is further refined in the bottle.
2019 was an excellent Chablis vintage with unusually full and concentrated wines that appeal above all to friends of white Côte d'Or Burgundies. Despite the warm year, the bouquet is very typical of a Chablis with its cool aromas and clarity. Fine pear note, citrus fruits and some brioche. Powerful and balanced on the palate, the wine has body and mineral freshness, as well as plenty of elegance, as one would expect from a quality Chablis. Can be enjoyed young, but can also be kept in a cool cellar for a few years.
