The Côtes du Jura Tradition is the main product of the Domaine Berthet-Bondet. This organically grown Jura wine consists of 80% Chardonnay and 20% Savagnin vines, which grow here on gravelly marl soils.
The oxidative aging takes place in traditional 228L barrels. In keeping with the Jura tradition, these are not filled up during the two-year aging (non ouillé) and the yeast bloom forms in the barrel, as is also known from sherry.
2018 was an excellent vintage with ripe grapes and very good extract and excellent balance in the wines. Berthet-Bondet states a life expectancy of up to 30 years for the Tradition. But you can drink it with great pleasure as soon as it is on the market.
In culinary terms, this excellent Côtes du Jura is incredibly versatile. Sausage, cheese (fondue), Vacherin Mont d'Or from the oven and of course Comté, which also comes from the Jura, are just as perfect a partner as white meat or mushroom dishes. Ultimately, this wine goes well with almost all dishes, even with strong spices, but rarely dominates them.
