The Côtes du Jura Tradition from Berthet-Bondet consists of 80% Chardonnay and 20% of the native Jura grape Savagnin, a Traminer variant that is not fragrant at all. The wine is matured for two years in 228 liter barrels, in which a yeast flora forms, under which the wine slowly matures oxidatively. With ideal storage, the winery gives it a lifespan of up to 30 years. This is an announcement, but the 2012 vintage tried in 2020 showed no maturity or even age, so we do not doubt it.
The Savagnin grape is the king of the Jura. The top wines of the region are made from this non-fragrant Traminer variety, especially in the oxidative style, as here at the Côtes du Jura Savagnin from Domaine Berthet-Bondet. This wine spends three years under a yeast flora in 228L barrels without the loss being refilled during this time. This leads to a unique taste with strength, freshness, complexity and the typical oxidation note that is otherwise only known in a similar form from sherry. Jura is livelier, has more acidity and less alcohol than its Spanish cousin.
This excellent wine is something like the little brother of Vin Jaune, but despite its taste parallels, it is also completely independent, more like a wine than an aperitif, also an excellent accompaniment to a menu. Immerse yourself in the fascinating world of Jura wines.
