Salvaterra has highly impressive drying systems for Amarone grapes, one of the most modern in the region. During the 3-4 months of drying, the berries lose about 30% of their weight, leaving a highly concentrated juice, which leads to 15% alcohol and more after fermentation.
The vines for the Corte Giona Amarone della Valpolicella are from the vineyards of Tenuta di Mezzane and Tenuta di Cazzano di Tramigna. 80% is aged in wooden barrels, 2/3 in barriques and one third in large barrels. The Corte Giona Amarone has a dark color and a sturdy character, yet it also has a certain freshness that maintains the drinkability. Aromas such as cassis and wild berries can be found just like cocoa and dried plums. A wine for special moments and intense dishes such as stews.
